I just took my bettas out of their confining itsy bitsy tanks and put each in their own 10 gallon tank. I had the tanks lying around, and figured I'd see if they liked some more room. So far, they seem pretty happy. They are actually swimming around and exploring. My question is: Should i fill the tank with plants, or rocks and like objects? I would assume that plants and root-like objects would let them feel more at home. What do you think?

i am no expert but should not harm them give them some thing to hide behind thats my view hope it helps mate

They like tall plants that have broad leaves so they can perch on them or soft feathery ones. Caves are a good idea as they like to explore them and sit inside watching out.

Black Angel is most correct.What ever you use,make sure to examine closely for sharp or rough edges.Those long fins are very delicate.If you can,use silk plants instead of plastic.For caves the same rule applies.I've known people to use pantyhose to check for rough edges,but that's overkill.The skin on the inside of the forearm is good.If it feels rough to you,it'll injure the fish.
Much easier to prevent injuries than to treat them.Sorry to preach,but I learned this lesson the hard way.It was even harder on the fish.
