I love the pothos/philodendron and I think that I may understand some of your shooting woes. Something directing the light to the tank and preventing the camera form seeing it would help, sheet cardboard etc. Mind just for picture time and it need only cover from the side you are shooting.

One of the problems is that the camera is seeing the light outside the tank and basing it's settings off of that, rather than basing it's settings off of the inside. Makes more sense to me know that I see the rig.
