I have a beautiful pair of waterfall shrimp (they change colors, but one-dominant shrimp I've been told- is red and the one that moulted is brown, both with a white strip down the back), one of whom just moulted. He seems fine in his little shrimp cave, but I'm not sure if I need to remove the old shell. It's kind of cool to look at, but I wouldn't want it to foul my water. Also, how long will his shell take to harden, and do I need to do anything special for him?

i dont know about this specifically, but in the case of crabs you let them eat it when there shell hardens so they can get the chitan from it

Leave the shell in, as stated they will eat it. The new shell should be hardened within 1-2 weeks if they are anything like Ghost Shrimp. You don't need to do anything special for them except for keeping up with the water changes and it would be nice for him if you could arrange for some of his food to land at the entrance of his cave. As long as he has cover from the fish he should be fine.
